Aunt Alma’s Tomato Butter Preserves

Wondering if there’s something more to do with all those Blue Sky Vegetable Co. tomatoes that are available? Dirk’s grandparents grew tomatoes on the farm for Campbell’s Soup and Foster Canning Company. To this day, tomatoes in all forms are a summer staple. Dirk’s Grandpa loved his Aunt Alma’s preserves spread on bread, but it’s also delicious as a glaze on beef and pork roast.

Ingredients:

 5 c tomatoes, chopped to even ‘lumps’

 5 c sugar

 2 Tbsp lemon juice

Method:

 Put tomatoes and sugar in a large kettle.

 Cook sugar and tomatoes together until almost to 222 degrees, stirring frequently. It will boil up

during this part which takes about an hour.

 Then, add lemon juice and cook to 222 degrees again. This takes up to ½ hour.

 Put in jars, clean jar lips, and put on lids.

 Process in boiling water bath for 10 minutes.

Makes 5 half pints.

Options and Notes:

I have doubled this recipe with good results.

Don’t be tempted to continue cooking the preserves because they seem thin. Take it from the voice of

experience, the preserves will thicken.
