Grilled Cabbage
Caraflex cabbages are perfect for grilling since they stay together when cut into wedges. Regular cabbage works well too. Drizzle with dressing for a new take on this familiar vegetable.
Ingredients:
· 1 small green cabbage
· 2 Tbsp olive oil, divided
· ½ tsp kosher salt and fresh ground pepper
· 1 Tbsp balsamic vinegar
· 1 Tbsp olive oil
· ½ Tbsp honey or maple syrup
· 1/8 tsp onion powder
Method:
· Preheat a grill to medium-high heat (375-450 degrees F)
· Remove any tough outer leaves of the cabbage. Cut it into 8 wedges, leaving the stem intact. (Depending on the size of the cabbage, you may want to cut fewer wedges or more)
· Place the wedges on a baking sheet. Rub both sides with 1 Tbsp of the olive oil. Sprinkle on ¼ tsp kosher salt and freshly ground pepper on one side of the wedges, then flip them and sprinkle the remaining ¼ tsp kosher salt on the other side.
· Place the cabbage directly on the grill grates. Grill 5 to 6 minutes per side (10-12 minutes total) until softened, turning once.
· In a small bowl, mix the balsamic vinegar, the remaining 1 Tbsp olive oil, honey or maple syrup, and onion powder.
· Place wedges on a serving plate. Drizzle the mixture over the wedges and serve.
Options:
Other drizzles for grilled cabbage include ranch dressing, Caesar dressing, teriyaki sauce, or BBQ sauce.
