Blistered Shishito Dip

This dip is great for dipping crackers, spreading on bread, or drizzling over tacos. It made a great taco salad dressing.

Ingredients:

1 pint of shishito peppers

2 TBSP olive oil

2 TBSP Lime Juice

2 TBSP plain Greek Yogurt

2 garlic cloves

Salt and Pepper, to taste

Method:

Begin by blistering the shishito peppers. Cover peppers in olive oil and heat up cast iron pan. When pan is hot, add oiled peppers to pan. Allow peppers to roast or blister 3-5 minutes on each side. The skin should appeared blistered.

Cut stems off blistered peppers. Add peppers, olive oil, lime juice, yogurt, garlic, and salt and pepper in food processor or blender. Blend until smooth. Enjoy!
