Gochujang and Walnut Roasted Brussel Sprouts

This recipe calls for gochujang, which is popular in Korean cuisine and is really surging in popularity in the U.S. Gochujang is fermented red pepper paste and has spicy and savory notes. Paired with the sweetness of honey and the nuttiness of the walnuts, these gochujang roasted brussel sprouts are delightful.

Ingredients:

1 pound brussel sprouts

1/3 cup olive oil

2 TBSP rice vinegar

3 TBSP honey

2 TBSP gochujang paste

1/4 cup chopped walnuts

Method:

Preheat oven to 425 degrees F. With a knife, remove the base of each sprout and cut in half.

In bowl, whisk together oil, rice vinegar, honey, and gochujang paste. Toss brussel sprouts and chopped walnuts in mixture.

Spread brussel sprouts and walnuts on sheet pan. Season with salt and pepper.

Roast brussel sprouts for 25-30 minutes.

Garnish with cilantro or green onions. Enjoy.
