Warm Pecan Bacon Dressing

Dress up your holiday salads with this delicious shallot-based dressing.

Ingredients:

 1 Shallot, minced (about 3 Tbsp)

 5 Tbsp white wine vinegar

 1Tbsp whole grain mustard

 1tsp sugar

 ¼ tsp salt

 6 slices bacon, cut into ½” pieces

 1/3 cup pecans

Method:

 Combine first 5 ingredients in a microwave safe bowl.

 Microwave for 30-60 seconds, until steaming.

 Cool.

 Saute bacon and pecans in frying pan until bacon is crisp and pecans are toasty.

 Remove from heat.

 Add other ingredients to bacon pieces and pecans and stir together off heat.

 Enjoy over greens.

Notes and Options:

Dressing can be made in advance and refrigerated covered. Bring to room temperature and warm in microwave for about 1 minute on medium power before tossing with greens.

This dressing is great with strong greens, as well as spinach with apples or pears or mixed greens.

No shallots? Experiment with blush onions finely minced instead.
