Watermelon Salad
A refreshing salad perfect with anything you’re grilling.
Ingredients:
3 cups seedless watermelon, cubed and chilled
1 cup cucumber, large seeds removed, quartered and cubed
1/2 cup crumbled feta
7 oz arugula
1/4 small red onion, sliced very thin
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
kosher salt and fresh pepper
Method:
Wash arugula and dry well.
In a large bowl whisk vinegar, olive oil, salt and pepper.
Toss with the remaining ingredients and serve.
Notes and Options:
Substitute the arugula for Romaine, butter lettuce, watercress or mixed greens.
Swap feta for goat cheese or ricotta salata.
To feed a crowd just double or triple the recipe and make the dressing on the side.
