Onion Soup
This cozy, quick version of French Onion Soup is easy to make.
Ingredients:
4 cups thinly sliced onions
2 cloves garlic, finely chopped (or more)
1/4 cup olive oil, butter, or margarine
5 1/2 cup water
1/3 cup white wine or white grape juice
7 tsp. vegetable or beef Better-than-Broth or 7 beef flavored bouillon cubes
Fresh Rosemary
slices French bread, toasted
Swiss, Gruyere, or Provolone cheese slices
Method:
In large saucepan, cook onions and garlic in oil until tender.
Add water, wine/juice and bouillon.
Bring to a boil; reduce heat, add rosemary.
Cover and simmer for 30 min.; stirring occasionally.
Adjust seasonings to taste.
Serve by ladling the soup into bowls.
Top with toasted bread and cheese.
Options and Notes:
A combination of onions and shallots may be used for a more complex flavor.
If using olive oil, consider adding a small pat of butter or margarine to add more flavor after simmering.
If time permits, use oven proof bowls for the soup. After filling the bowl 2/3 full, top with a slice of bread and cover with cheese. Broil on low until lightly brown and bubbly.
