Shallot Dressing
This dressing goes well with many salads.
Ingredients:
¼ cup olive oil
2 Tbsp finely chopped shallot (1 small)
4 Tbsp white wine vinegar or rice vinegar
1-1/2 Tbsp maple syrup, honey, or agave nectar
½ tsp salt
¼ tsp pepper
2- 2-1/2 tsp Dijon mustard
Method:
Combine shallot, vinegar, maple syrup, and mustard.
Whisk together.
Taste and adjust seasonings with salt and pepper.
Add olive oil and whisk until emulsified
Store in glass jar in refrigerator
Options and Notes:
I make multiple batches of this dressing at one time. It keeps well in the refrigerator and goes with manydifferent salads.
The maple syrup and honey each add their own distinct character to the dressing. For a more neutral flavor, use agave nectar.
